Stuffed Pepper Recipe

This stuffed pepper recipe is about as easy as it gets. But, it still tastes terrific, and as you know, I love peppers.

As with all my pepper recipes, I recommend adding some chopped jalapenos or whatever your favorite spicy condiment happens to be.



Stuffed Pepper Recipe

Ingredients:
4 green peppers
1 large onion
8 oz. grated cheese
10 firm tomatoes
3 oz. cooked rice
1 egg
1 tablespoon olive oil
seasoning

Directions:
- Remove stalks and seeds from blanched peppers.
- Chop onion and two tomatoes and fry in oil until soft. Mix with rice, beaten egg and half the cheese. Season mixture and fill pepper cases.
- Sprinkle remaining cheese on top and place in an ovenproof dish.
- Cover and bake in a hot oven for about 20 minutes
- Brush remaining tomatoes with oil and arrange round the peppers and cook for a further 15 minutes.
