Stir Fry Chicken Recipe

Stir Fry Chicken Recipe

Ingredients:
1/4 cup peanut oil
1/2 pound fresh boneless, skinless chicken breasts thinly sliced
1/2 pound sugar peas trimmed
1 (8-oz.) can sliced bamboo shoots rinsed and drained
1 cup diagonally sliced celery
1 cup thinly sliced mushrooms
1 teaspoon salt
1 (14.5-oz.) can low-sodium chicken broth
1/4 cup water
3 tablespoons cornstarch

Directions:
Heat a large wok or skillet over medium-high heat. Add oil and heat until hot, but not smoking. Add chicken breasts and stir-fry for 1 minute. Stir in sugar peas, bamboo shoots, celery, mushrooms and salt. Stir-fry for 1 more minute. Add chicken broth and bring to a boil. Cover and steam for 1 minute. Mix together water and cornstarch and stir into wok. Stir constantly until sauce thickens. Serve immediately.
