These Salsa Recipes Provide a Healthy Choice!
In today's world of fast food and takeout cuisine, these Salsa recipes are a healthy way to add taste to those bland, low fat, low cal meals that are supposed to be good for you.
There are many delicious ways to incorporate your homemade salsa into almost any kind of meal to change your food from bland to BAM! without increasing the fat and calory content.
The quick and easy marinade for the
chicken makes this meal delicious. Combine that with one of my favorite salsa recipes and you've got an instant, healthy meal. Enjoy!
Grilled Honey Lime Chicken Tacos
Ingredients:
1 lime, juiced
2 tablespoons honey
1 teaspoon cumin
1/2 tablespoon (a handful) cilantro, finely chopped
2 tablespoons extra-virgin olive oil, canola, or corn oil
4 pieces boneless skinless chicken breast (6 to 8-ounce)
1 teaspoon coarse salt and pepper
1 cup shredded cheddar cheese
1 cup prepared roasted salsa (recipe here)
8 flour tortillas

Directions:
-Combine first 5 ingredients in a small bowl. Sprinkle chicken with seasoning blend or salt and pepper. Coat chicken in dressing and set aside for 10 minutes.
-Grill chicken on an indoor electric grill 6 to 7 minutes or pan fry over medium high heat in a large nonstick skillet uncovered 6 minutes per side.
-Slice chicken breasts on an angle and pile in tortillas, add shredded cheese, and salsa.
-Serve with chips and salsa.
Chef Jay Recommends: Use your George Foreman Grill, it is ideal for cooking chicken breasts. The meat will remain moist and will cook in half the time it normally takes, because it is cooking from both sides simultaneously. I use my George for all types of meats!
