Bean and Cheese
Quesadilla Recipe!

If you are looking for a good quesadilla recipe, then I've got a quick and easy one for you. You won't believe the taste, and best of all you can make it as hot and spicy as you want. Just add more sauce or peppers.

Bean and Cheese Quesadilla Recipe

Ingredients:
1 (16-ounce) can refried beans
8 (8-inch) flour tortillas
1 large red bell pepper, finely chopped (add jalapenos if you're brave)
1/4 cup chopped fresh cilantro or parsley
2 cups (8 ounces) shredded Monterey Jack or Cheddar cheese
Hot sauce to taste

Directions:
- Preheat oven to 450F. Combine refried beans and hot sauce in medium bowl; mix well.
- Spread 3 tablespoons mixture on each tortilla to within 1/2 inch of edge; sprinkle with red bell pepper, cilantro and cheese. Place tortillas on 2 large cookie sheets.
- Bake 5 minutes or until cheese is melted and edges of tortillas are golden. To serve, cut tortillas into wedges.
