Spicy Mashed Potato Recipe

Without a mouth watering mashed potato recipe, no Holiday meal would be complete. Of course Chef Jay's isn't your everyday ordinary Thanksgiving recipe.

This garlic and jalapeño potato recipe will leave the mashed potatoes melting in your mouth. Served alongside your favorite Thanksgiving recipe such as turkey, ham and your favorite vegetables, this mashed potato recipe will round out any meal.

Baking the potatoes as opposed to boiling them gives the mashed potatoes a deep earthy taste. You'll love the flavor combination of garlic, pepper and oregano, and who knows, maybe even Grandma will take a liking to these fiery spuds! Just tell her it is Chef Jay's favorite mashed potato recipe and she'll be hooked;)



This mashed potato recipe can be easily adapted to a twice baked potato recipe. Just a few simple changes and you've got my favorite side dish for steak, or barbecue, or whatever you like with your baked potato.

Of course if you grew up in the South you probably don't remember a holiday without sweet potatoes. This chipotle recipe for sweet potato is a great change from the norm. The spicy smokey flavor of the chipotle is a great compliment to sweet potatoes. I guarantee you'll like this recipe so much, it'll be served at the dinner table for years to come.

Jalapeño Garlic Mashed Potato Recipe

Ingredients:
6 medium russet potatoes (baking potatoes)
1 bulb garlic
2 tablespoons olive or vegetable oil
2 tablespoons jalapeño
1 teaspoon fresh oregano, chopped
1/2 teaspoon salt
1/3 cup milk
1/4 cup fresh chives, chopped

Directions:
- Preheat oven to 400º.
- Pierce potatoes with fork to allow steam to escape. Cut 1/4-inch slice from top of garlic bulb to expose cloves. Carefully remove most of the paperlike skin, leaving the bulb intact and the cloves unpeeled. Wrap garlic in aluminum foil. Bake potatoes and garlic about 1 hour or until potatoes are tender.
- Heat oil, jalapeño and oregano over medium heat 2 to 3 minutes or until oregano is fragrant.
- Allow garlic to cool about 10 minutes. Cut potatoes in half and spoon potato into a large bowl. Discard skins. Separate garlic cloves and press the cloves slightly to squeeze the garlic out; discard skin. Place garlic in bowl; add oil mixture and salt.
- Beat potato mixture to your desired consistency, (I like mine a little lumpy) adding milk in small amounts until you have the consistency you are looking for. Stir in chives.

Of course, a mashed potato recipe can go with just about any type of food. Beef, chicken, fish, you name it...just add a little heat and go to town!

I know a motto at our holiday gatherings is there is no such thing as too much starch! Well, OK, I made that up, but we usually have a mashed potato recipe, a rice casserole, some creamy corn and of course some sweet potatoes. Now that is a lot of starch, but hey, it is the holidays so eat up.

This recipe for sweet potato is adapted from one seen on the Food Network as made by Dave Herschkopf , of Dave's Insanity Sauce fame.

Chipotle Sweet Potato Recipe

Ingredients:
5 pounds sweet potatoes (about 8 large),scrubbed
2 canned chipotle chiles in adobo sauce , minced and mashed to a paste (about 1 tablespoon)
3 tablespoons unsalted butter, cut into pieces and softened
1 teaspoon maple sugar
Salt
Freshly ground black pepper

Directions: - Preheat oven to 450º.
- Line a baking sheet with foil. Prick potatoes with a fork and bake in middle of oven 1 to 1 1/2 hours, or until very soft. Cool potatoes until they can be handled and scoop flesh into a bowl.
- With an electric mixer beat potatoes with chili paste, butter, sugar, and salt and pepper, to taste, just until smooth and spread in a buttered 2-quart shallow baking dish. Potatoes may be prepared up to this point 1 day ahead and chilled, covered. Bring potatoes to room temperature before proceeding.
- Reduce oven temperature to 350º. Bake potatoes in middle of oven until hot, 20 to 25 minutes.

Twice Baked Potato Recipe

Both the mashed potato recipe above and this recipe for sweet potato can be adapted to your favorite family recipe pretty easily. A simple twice baked potato recipe can be made by saving the skins from the baked potatoes, and refilling them with the mashed potates. Then throw them back in the oven, on a cookie sheet, for 20 to 30 minutes covered with shredded cheddar cheese!

Some sweet potato recipes call for a layer of marshmallows to be added before baking the sweet potato mixture. Whatever your family recipe, you can bring up the heat by incorporating these simple recipes into your own. Have fun and enjoy the holidays!
