Low Carb Chicken Recipe Buffalo Chicken Tender

This chicken recipe uses low carb substitutes, but does not substitute the flavor! They are delicious. And if they aren't hot enough for you, just add more of your favorite hot sauce.
Don's Low Carb Buffalo Chicken Tender RecipeChicken Tenders: 1 pound boneless,skinless chicken breasts 1/4 cup Keto Cajun Crumbs 1/2 cup Atkins Bake Mix 1 cup vegetable oil 2 eggs Buffalo Chicken Tenders Sauce: 4 tbsp butter 1 2oz bottle of Tabasco Sauce 1 tsp Mrs Dash Extra Spicy
Directions: 1. Cut the chicken breasts into 1/4 inch wide strips. 2. In a bowl, combine the Keto Cajun Crumbs and the Atkins Bake Mix. 3. In another bowl beat the 2 eggs. 4. Dunk the chicken breast strips into the eggs then the crumbs. Set aside. 5. In a large skillet, we prefer an electric skillet for this job, heat the oil at 400 degrees and lightly brown the strips on both sides. Set aside. 6. In a small sauce pan, melt the butter, add the Tabasco and Mrs Dash. 7. Pour the buffalo sauce over the chicken strips in a 9 x 12 glass baking dish. 8. Bake at 300 degrees for 20 minutes. 9. Serve with blue cheese dressing and celery sticks.
