Low Carb Breakfast Recipe!
A low carb breakfast recipe is the perfect way to get your day off right! Whether you like a hearty omelette or belgian waffles, you can't go wrong with Chef Jay's breakfast recipes.
To spice up this cheese omelette recipe, I recommend adding some diced peppers. And you can add a little ham to make it a true western omelette.
Spinach Cheese Omelette Recipe
Ingredients:
Non stick cooking spray
4 Eggs
Salt
1 cup Spinach
Cayenne Pepper
shredded sharp cheddar cheese
1 Tablespoon fresh chives, flat-leaf parsley or chervil
2/3 cup red pepper relish (see recipe)
Directions:
- Light coat an eight inch nonstick skillet with cooking
spray and heat over medium high heat. In a mixing bowl, beat together the eggs, one dash of salt and one dash of cayenne pepper until mixture is frothy. Pour into skillet. Allow the egg to set, making sure to lift the edges frequently and allow uncooked portion to run under the cooked portion. Continue until egg appears glossy and cooked, but still moist. Add the cup of spinach and 2 tablespoons of red pepper relish, topping with cheese and chives.
- Use spatula to lift up the edges of the omelet and fold in half. Sprinkle with remaining spinach and red pepper relish. Add additional cheese and chives to taste.
Red Pepper Relish Recipe:
Ingredients:
2/3 cup sweet red pepper
2 Tablespoons chopped onion
1 Tablespoon cider vinegar
1/2 Teaspoon black pepper
Directions:
- Combine all ingredients in a bowl and set aside while preparing omelette. This should make about 2/3 cup of red pepper relish.
Yields one serving

Belgian Waffle Recipe
Ingredients:
4 eggs,separated
1 Tablespoon "Just Whites" (egg white powder or
substitute)
1 cup cottage cheese
1 Tablespoon gluten flour
2 Tablespoons butter
2 Tablespoons oat bran
1 Teaspoon vanilla extract
1 Teaspoon cream of tartar
1 cup sliced stawberries
Directions:
- Mix egg whites from separated eggs with cream of tartar
and
beat until stiff peaks form. Blend egg yolks, "Just
Whites", cottage cheese, gluten flour, butter, oat bran
and vanilla separately in a blender until smooth. Fold
blended
mixture gently into egg whites.
- Cook with a standard waffle iron coated with a nonstick
cooking
spray.
(Yields about 8 servings)
