Low Carb Cucumber and Avocado Salad

Ingredients:
1 cucumber
Salt
Chili pepper
1 tablespoon fresh lime juice
1 teaspoon minced onion
1 red bell pepper
Lettuce
1 ripe avocado, sliced
Fresh parsley

Directions:
Peel and slice the cucumber paper-thin. Season with salt, chili pepper and lime juice. Sprinkle with onion and red pepper slices.
Arrange lettuce on 6 serving plates. Pile cucumber mixture in center of each plate. Add avocado slices and parsley.

Low Carb Ham and Cheese Roll

Ingredients:
8 ounces cream cheese, softened
2 cup Cheddar cheese, shredded
1 teaspoon grated onions
1 teaspoon dry mustard
1/2 teaspoon paprika
2 1/4 ounces deviled ham
1 tablespoon parsley flakes
1/2 cup pecans, chopped
Parsley sprigs

Directions:
Combine first 7 ingredients, mixing well; chill thoroughly. Shape into an 8-inch roll, and coat with pecans. Chill. Garnish with parsley, and serve with assorted crackers.
