Well, with just a little chile pepper or some spicy ground pepper, you can turn that bland turkey into a tasty leftover turkey recipe. Whether you are in the mood for a sandwich or some soup or even a little mexican dish, I've got something you'll like.
First I will show you a simple, easy turkey soup recipe. All you need for this recipe for leftover turkey is a few vegetables, some peppers and in no time you'll have the perfect meal for a cold fall evening.

1 can chopped green chiles, drained (4 ounce)
1 teaspoon chili powder
1 tablespoon ground cumin
1 garlic clove, minced
1/2 teaspoon dried oregano leaves
1/4 teaspoon cayenne pepper
6 cups chicken stock
1 can tomatoes, diced (10 ounce)
2 cups cooked turkey breast, chopped
1 cup frozen corn, thawed
1/3 cup chopped fresh cilantro
1 1/3 cups shredded Monterey Jack cheese
Tortilla chips
Directions:
- Heat oil in large saucepan over medium-low heat. Add
onion and cook 4 minutes.
- Add green chilies, chili powder, cumin, garlic, oregano,
and cayenne pepper. Cook and stir 1 minute.
- Stir in chicken stock and tomatoes with green chilies.
Bring to a boil. Add turkey and simmer 3 minutes. Add corn
and cilantro, simmer 15 minutes.
- Ladle soup into bowls. Sprinkle each serving with generous amount
of cheese and chips.
Turkey Salad Recipe
Ingredients:
1 cup turkey, chopped
1/2 cup jalapeņo, chopped (substitute 2 tablespoons Huy Fong Sriracha Hot Chili Sauce)
1/2 cup mayonnaise (I like to use miracle whip salad dressing too)
1/4 cup dijon mustard
1/4 cup chopped sweet pickles (or sweet relish)
2 hard boiled eggs, chopped
salt and pepper to taste
Bread or Rolls
Directions:
- In a large glass bowl combine turkey, jalapeņos, egg and relish. Mix together.
- Add mayo and mustard stir until ingredients are combined. Salt and pepper to taste.
- Spoon mixture onto sliced bread or onto dinner rolls of your choosing.
When making sandwiches with this leftover turkey recipe, I like the crunchy
texture of the jalapeņo chunks and pickles. If you prefer a more smooth
texture, substitute Huy Fong Chili Sauce for the jalapeņo and sweet relish for
the pickles.
The key to this leftover turkey recipe is having the contrast of the spicy and sweet flavors. Whichever way you prefer it, crunchy or smooth, you are going to love the taste.
Turkey Taco Recipes
Ingredients:
1 cup leftover turkey breast, chopped
2 avocados
1 clove garlic, chopped
1 lime, juiced
1 tomato, chopped
1 jalapeņo, chopped
1/2 medium white onion, chopped
1 tablespoon cilantro, chopped
salt and pepper to taste
tortillas
shredded cheese
Directions:
- in a glass bowl combine the following
- slice avocados in half, remove pits, scoop out pulp
- add garlic and lime juice
- mash together with a fork
- add tomato, jalapeņo, onion, and cilantro, stir together. Salt and pepper to taste.
- refrigerate covered for 30 minutes to allow flavors to combine.
Now you are ready to build a delicious leftover turkey recipe. To each tortilla, add
a generous portion of leftover turkey and guacamole. Add as much cheese as you like and there
you have one of my favorite leftover turkey recipes.
There are lots of ways to enjoy leftover turkey. If you don't like bland, spice it up with
