Spice Up Your Life with
Hot Sauce Recipes!

People worldwide have developed their own hot sauce recipes with the growing availabity of chile peppers. Variations on the concept are limited only by the imagination. Nothing beats the taste of your own homemade sauces.

Hot sauce recipes begin of course with the chile pepper. Depending upon availability in your area, you should use the freshest possible variety. Many chileheads grow their own chile pepper supply. This is certainly not necessary.



For a basic hot sauce start with:

1 - 16 ounce can of tomato sauce
1 - medium onion, chopped
2 - cloves of garlic, minced
6 - peppers, chopped
salt and pepper

You will want to choose your peppers based on desired heat and availability. Also, you may want to slice your peppers in half and take out the seeds. Some hot sauce recipes leave them in, it is up to you.

Start by sauteing the onion, peppers and garlic in a teaspoon of olive oil for three minutes in a sauce pan. Add the tomato sauce and bring to a boil. Reduce heat and allow to simmer for 15 minutes. Place ingredients in blender and puree.

You can eat it now, but I prefer to simmer for another 15 minutes, just to let all the flavor combine. Salt and pepper to taste.

After your first batch, you can adjust the ingredients to fit your taste. I like more jalapeņo and garlic flavor, but that's me. You can try different types of peppers, and different quantities. There is no limit to the number of ingredients you can add to your hot sauce recipe. Some folks like to add some fresh cilantro or other herb, and some like to add fruit like mango to give it a different taste.

Belizean Hot Sauce

Ingredients:
1 lime, juiced
3 Tbsp white vinegar
1 tsp salt
4 Habaneros, seeded and stemmed

1 small sweet onion
1 Tbsp vegetable oil
1 cup carrots, chopped
2 cups water

Directions:
Mix lime juice, vinegar and salt. Allow habaneros to soak in mixture at least 20 minutes.

In medium hot pan, saute onions in vegetable oil until they are clear and soft. Add the carrots and water, bring to boil. Reduce heat, cover and simmer until carrots are soft, about 15 minutes. Remove from heat.

Place all ingredients in blender or food processor and puree until smooth.

Be careful not to inhale the fumes from this mixture, the habaneros will be verrry strong and will irritate your eyes. But, eat all you can! I use this hot sauce recipe as an addition to barbecue sauces when I really want to fire up some Q!


The above hot sauce recipes are a great base for hot chicken wing sauce. To the puree, add a stick of butter and allow to melt. Simmer the sauce until it thickens enough to coat a chicken wing. Or, if you want to try a delicious recipe, try the
