Chile Pepper Extract -
So, You Want MORE Heat?

There is no chemical on Earth hotter than chile pepper extract. You've seen it used before when the police use pepper spray to bring a crazed felon to his knees. The liquid heat you use to rub on your sore back uses a mild form.

But, do you really want to eat this stuff? Well, more and more chileheads are turning to hot sauces made from the pepper extract to get their fix.

Capsaicin is the chemical found in peppers which causes a burning sensation. In an attempt to make products hotter than plain peppers, scientists use a process to extract capsaicin from the rest of the pepper. Thus, leaving almost pure heat formed in an oil base.





The heat produced by capsaicin is measured in Scoville units. Jalapeno peppers measure around 5000 units. The hottest pepper ever tested, the Red Savina, tested at 577,000 units. While pure capsaicin is estimated at around 16 million units.

Although many varieties of hot sauces use the extract as a basis for their heat, we have found a select few which can claim their spot at the top of our list. These sauces are so hot they should only be used as a food additive, one drop at a time. So venture only if you dare!

The Chileheads Wish List

1. The Source - This tiny bottle comes in a unique box, with a unique warning. "Now you have the responsibility to use the Source....Are you strong enough to face the challenge?" Packed with 7.1 million Scoville units, it is hard not to take this sauce seriously. Ingredients: Natural extractives of Chile peppers.

2. Blair's 5am Reserve - This sauce comes packaged in an English jar and in limited numbers. At 6 million Scoville units, we don't know of anyone who has actually tried this liquid Hell. But it can be found on any serious collector's shelf. Ingredients: natural pepper flavoring, soybean oil, Cayenne chiles.

3a. Da' Bomb Final Answer - The latest in this series of excellent sauces checks in at 1.5 million Scoville units and comes in a black bottle, this should tell us something. Is it the Final Answer? Probably not, but we'll see. Ingredients include: Habanero peppers, pepper extract, apricot nectar, mustard flour, garlic, allspice and spices. Fat free.

3b. Smack My Ass and Call Me Sally-Chet's Gone Mad - Ok, this one has the longest name of our million unit club entrants, but it doesn't come up short on heat either. At 1.5 million units, and with probably the funniest bottle of any of the hot sauces, it comes in a special eye dropper bottle inside a plastic medicine container.

4a. Cool Million - This fiery sauce comes in a metal tin, signed and dated, and a warning on the side, "Keep away from children".

4b. Mad Dog Revenge Habanero and Chile Extract - Packaged in a unique blue bottle with a waiver attached. At 1 million units, this tasty sauce is the result of processing 12 pounds of peppers per bottle. Now that is some serious heat. Ingredients: Chile extract, Habanero chile extract and soybean oil.

4c. One Million Scoville Units - This sauce comes in a larger (5 oz.) bottle than others on this list. But don't let that fool you, it comes with a guarantee of 1 million Scoville units +/-5%, and a small spout to help pour. Ingredients: premium high grade certified oleoresin capsicum.
