Fiery Barbecue Chicken Recipes!

The most obvious way to increase the heat of your barbecue chicken recipes, or any food you are grilling, is by using a hot or spicy marinade. A spicy dry recipe for barbecue rub is an easy way to raise the level of heat, any combination of dried spices and herbs can be used. The dry rub is sprinkled onto the meat and rubbed in, allowing the spices to penetrate the skin.



Chicken can also be marinated using any number of wet methods. Any sauce can be used as a marinade, most outdoor grillmeisters use their favorite
barbecue sauce recipe. In most barbecue chicken recipes the chicken is allowed to marinate in the sauce covered in a cool place for 1 to 4 hours.

The acidic content in citrus fruits such as lemon and lime, make them a great base for a wet marinade in your barbecue chicken recipes. The acid allows the sauce to penetrate the meat much faster. My favorite quick marinade recipe for chicken breasts is Honey Lime Chicken.

Another way to increase the heat of your barbecue chicken recipes is to stuff the pieces with your favorite chile peppers. Drumsticks can be easily stuffed by simply sliding a piece of sliced chile pepper between the bone and meat, and then grilled as you would normally.

Whatever method you use, always check the temperature of any chicken pieces for doneness with a thermometer. Chicken should achieve an internal temperature of 170 degrees and be allowed to sit for 10 minutes after cooking before eaten.



The following is a great barbecue chicken recipe for whole chickens, well, cut in half anyway. You'll love the taste of this caribbean jerk barbecue chicken recipe. And, after that I am going to show you something very different, in fact, I had never tried it before. But give it a try, I guarantee you won't bedisappointed.

Jerk Chicken

Ingredients:
1 (3 1/2 to 4 lb.) fryer chicken
vegetable cooking spray
1/2 cup caribbean barbecue sauce

Directions:
- Remove and discard giblets from chicken, rinse chicken under cool water and pat dry, remove skin and excess fat, split chicken in half lenghtwise.
- Place chicken in shallow dish, cover both halves with sauce, cover and marinate for 2 hours.
- Coat grill rack with cooking spray, place rack over medium heat. Place chicken on rack, cook 45 minutes or until done, turning and brushing with sauce every 15 minutes.

Now, for something completely different, I have been getting requests for a barbecue chicken pizza recipe. Yep, you read right, barbecue chicken pizza! Well, I didn't have a barbecue chicken recipe for pizza, but I found one and believe me, it tastes much better than it sounds. It is quite simple to put together, while you have the grill fired up for your favorite barbecue treats. And, of course, you can make it as hot as you want it to be, just add chile peppers or hot sauce.

Barbecue Chicken Pizza Recipe

Ingredients:
1 cup barbecue sauce
2 chicken breasts, boneless, skinned, chopped
2 pizza crusts, (store bought is fine, I like Boboli)
Cooking spray
1 cup mozzarella, shredded
1/4 cup green onions, sliced
2 jalapeņos, diced

Directions:
- Combine 1/3 cup of barbecue sauce and chopped chicken in a small bowl. Toss, set aside.
- Prepare grill for medium heat. Place crust on grill rack coated withcooking spray. Grill 3 minutes or until puffy. Turn crust, spread withhalf of remaining barbecue sauce.
- Top with mozzarella, chicken, green onions and jalapeņos.
- Cover and grill for 3 more minutes, until cheese is melted and lightly browned.
- Repeat for second crust and toppings.

There you have it, simple chicken pizza. Of course, you can add whatever ingredients you like. Keep in mind, the toppings won't havetime to cook, so the smaller the pieces the better. Be creative andenjoy this one! I did.
