Ingredients: 1 tablespoon oil 1 tablespoon all purpose flour 8 oz can diced green chile 1 small onion, diced 3 cloves garlic, minced 2 cups already cooked elbow macaroni 3/4 cup half and half cream 3/4 cup sharp cheddar cheese, shredded Directions: 1) Preheat oven to 350 degrees 2) Be sure the macaroni is cooked and cooled. 3) Heat the oil in a medium skillet over medium heat. 4) Cook onion until translucent. Add garlic, cook until fragrant. 5) Add flour and stir. Cook two or three minutes (You are making a roux). 6) Remove from heat. Add cream. Let sit about 5 minutes off of heat. 7) Stir to combine. Add remaining ingredients, Place in a greased loaf pan. 8) Bake until golden and bubbly, (The bubbly part is important so the flour taste is gone and it has thickened), about 35 to 45 minutes.
