Chef Jay's Ramblings!

Well, I turned 40 in May and I am sorry to say that my old stomach just can't take the heat anymore. No more jalapenos for breakfast, no more Red Savina Garlic sauce in my chicken noodle soup, I just can't handle it anymore.

Yeah Right! That'll be the day. I didn't actually count, but I must have received more than a dozen salsas, sauces, rubs and marinades for my birthday. Lisa and I haven't tried them all yet. However, I have reviewed a few of our favorites for you in this issue.

Over the long holiday weekend here in America, Lisa put me to work! We finally painted our master bedroom, a project I have been putting off for some time now. Lisa did most of the hard stuff, taping and painting around the trim, windows, doors and ceiling.

Of course I was in charge of cooking for the weekend. There was one major setback, my grill ran out of gas so I ended up cooking inside all weekend. We did try a delicious twice baked jalapeno potato recipe that I'll share with you here.

Also, since grilling is such a big tradition during the summer holidays in Texas, I am going to share a delicious, simple recipe for grilled steaks.

Lisa's Favorite...Pickle Sauce

Well it is finally happening, Lisa is becoming a chilehead! The process is going slow but she has found a sauce that she just can't live without.

The brand, Texas Sassy, matches Lisa to a "T". They have several different products on their site, be sure to check them out here.

Lisa's favorite is their Pickle Sauce. As the name implies, this is a sweet, sour, then spicy potion made from pickle brine. It looks just like pink pickle juice, but boy does it pack a punch!

Lisa loves it on her salad and as a way to add a little extra flavor to rice. I think it would go great with grilled fish or chicken either as a finishing sauce or dip.

Jay's Favorite...Habanero Salsa

Yes, I know, there are hundreds of different habanero salsas out there. Trust me when I tell you, this one is worth a try.

I love tomato salsa. I think this is the way salsa is meant to be. So when I came across this super hot Habanero Tomato Salsa made by Meier Ranch Foods, I was smitten.

Many habanero salsas I have tried just don't stay true to the tomato salsa flavor and texture. Most often they are sweet and tangy. There is nothing wrong with this, it just isn't what I prefer.

So if you like a good tomato salsa and are looking for that extra heat, this is the place to go. Be sure you let me know what you think about these two. I know you'll enjoy them as much as we have.

Now, here are a couple of simple recipes you will enjoy during the summer months. There is nothing I like better than a nicely grilled steak and baked potatoes.

Twice Baked Jalapeno Potatoes

Ingredients:
4 baking potatoes
Olive oil
1/2 cup sour cream
1/2 cup cheddar cheese, grated
2 tablespoons butter
4 jalapenos, diced
Salt and Pepper to taste

Directions:
- Scrub the potatoes well and pierce the skin several times with a fork. Coat the potatoes with olive oil and bake at 400 degrees for one hour. Remove from oven and allow to cool for 5 minutes.

- Cut each potato in half lengthwise and scoop out the pulp, leaving the shell of the skin intact. In a large mixing bowl mash the potato pulp together with the sour cream, half of the grated cheese, butter, jalapenos and salt and pepper to taste. (You can also add chives, bacon bits, paprika or whatever you like during this step.)

- Scoop the mixture back into potato shells and place the halves on a baking sheet. Sprinkle remaining grated cheese on the potato halves and brown in preheated oven 5-10 minutes at 425 degrees.

Bourbon Steak

Ingredients:
1-1/2 pounds steak
1 teaspoon sugar
1/4 cup bourbon
2 tablespoons soy sauce
2 tablespoons water
1 garlic clove, crushed
1 cup Apple Wood Chips

Directions:
- Mix all ingredients (except chips) together, place in ziplock bag and
marinate steak 4 hours or over night. Soak wood chips in water for 30
minutes, and add to hot coals just before commencing to grill. Grill steak
to desired doneness. This recipe is good with any cut of steak you like.
