The Heat!, Issue #33 - Tailgating Recipes! November 15, 2007 |
| Hello! I'm back again...already. Since the last newsletter I've had requests for lots of different kinds of recipes, most falling into two categories, tailgating and holiday recipes.
Nothing new for this time of year, so I'm going to give you my favorite tailgating recipe, Fiery Sausage and Peppers, here. Also, I am looking for a good baked grits recipe, so if anybody has one please send it to me. I will try it over the weekend and include it in next week's newsletter if it turns out good. Thanks in advance for sharing.
Actually this recipe is great to try anytime you're having friends over and want to whip up an easy addition to whatever else you are serving up. In this case though, it can be cooked ahead of time in the oven or you can grill it at the game if you prefer. Fiery Sausage and Peppers RecipeThe recipe is quite simple and of course the ingredients can be adjusted to your individual taste. Start with about a pound of your favorite kind of sausage, the kind that looks like a horseshoe when you buy it, cut into bite size chunks. Then do the same with a bell pepper, a handful...or two...of jalapenos or any other peppers you have on hand, and a small onion.
Some other things you might want to add are mushrooms or garlic, but let your imagination go crazy, what wouldn't taste good mixed in with all these ingredients?
Once you have everything chopped up, spread it evenly out over a piece of heavy duty aluminum foil, about 18 inches long. Then cover everything with a helping of your favorite barbecue sauce and/or hot sauce, add another piece of foil on top and crimp the edges all the way around to seal everything inside your foil packet.
Now you're ready to cook. If you want to use the oven, place your packet on a cookie sheet and cook it at 350 degrees for about 30 minutes. On the grill, cook it over indirect heat for about 45 minutes. Turn the packet over every 15 minutes so it gets even heat. That is all there is to it.
I usually wait to open the package until I am ready to eat it, but you won't be able to wait for long, this is some tasty stuff.
