| Hello, As promised, this week I am bringing you 3 special newsletters. Each one will contain a recipe and a few words from me. Short and Sweet, Spicy Pumpkin Recipes! The Heat! is brought to you by Chile-Pepper-Sauces.com , and Chef Jay.
Quick Curried Pumpkin Soup RecipeIngredients:2 Tablespoons butter 1 small onion, minced 4 teaspoons curry powder 1 tablespoon cayenne 1/4 cup pecans, finely chopped 1 can chicken or vegetable broth 1/3 cup instant dried potato flakes 15 ounce can solid pack pumpkin 1 1/2 cups cider or apple juice 2 Tablespoons brown sugar 3/4 teaspoon salt few grinds pepper 2 cups half and half
Directions:
- Melt butter in bottom of 3-4 quart saucepot. Sauté onion for 2-3
minutes, until beginning to soften. Many thanks to Gloria J. Martin for allowing me to use her Curried Pumpkin Soup Recipe. Gloria is a self taught chef and teacher by trade who went on to become an accomplished cooking instructor. She taught classes for gourmet stores across the midwest including Williams Sonoma, and was a member of the International Association of Culinary Professionals. Gloria is now retired in Texas and I hope will have a cookbook in the works soon;) I serve this with my favorite cornbread recipe or if you're really into pumpkin, tomorrow I am going to show you a hot and tasty pumpkin bread recipe.
