The Heat!, Issue #08.3 -- Pumpkin Cookie Recipe!

Oops! I made a major gaffe in Tuesday's newsletter. I failed to give credit to the author, Gloria J. Martin, of the Curried Pumpkin Soup Recipe. If you missed it, check it out here.

This is your third in a series of three Special Halloween Pumpkin Recipes. I hope you liked them so far. Today's spicy pumpkin cookie recipe is great anytime of year, but especially at your Holiday gatherings. Let me know if you try these Short and Sweet, Spicy Pumpkin Recipes! Pumpkin Cookie Recipe

Ingredients:
1/2 cup shortening
1 cup sugar
2 eggs
1 cup canned pumpkin
1-1/3 tablespoons baking powder
1 teaspoon salt
2-1/2 teaspoons cinnamon
1 teaspoon cayenne pepper
1/2 teaspoon nutmeg
1/4 teaspoon ginger
2 cups flour
3/4 cup raisins

Directions:
- Cream shortening, sugar and eggs. Add pumpkin. Mix dry ingredients and add slowly to pumpkin mixture.
- Drop by spoonfuls on greased cookie sheet. Bake at 350° for 15 minutes.
- Frost if desired. Orange flavored frosting is good, make by adding enough orange juice to 2 cups powdered sugar to make spreading consistency.
