Lisa's Grilled Steaks

Yesterday I told you about Lisa's first attempt at grilling. Well, to be fair, it was way more than an attempt. Her ribs were delicious!

On Sunday she wanted to take a stab at grilled filet mignon steaks. Of course, I am always in the mood for a good steak. So, I made the potatoes and green beans while Lisa grilled some mouth watering filet mignons. Again, they turned out perfect.

I would like to think that her new found prowess at grilling has a lot to do with her teacher, but either way Lisa has discovered a new talent. Here is the filet mignon recipe "we" used. You'll find it very simple, and the result is perfection.

This competition-level recipe comes straight
from Randy Pryor's amazing new book,

Texas Terminator Steak Rub

Ingredients:
1/2 teaspoon black pepper
1 tablespoon salt
1/2 teaspoon cayenne pepper
1 teaspoon cumin
1 teaspoon coriander, dried
1 teaspoon oregano, dried
1 teaspoon thyme, dried
1 teaspoon marjoram, dried

Simply combine the ingredients to add zest to any steak!

Filet Mignon Recipe

Ingredients:
4 filet mignon steaks, cut 1 inch thick, 4-6 ounces each
4 tablespoons olive oil
Texas Terminator Rub

Directions:
- Combine olive oil and rub in small dish. Add steaks to dish and coat with mixture. Allow steaks to marinate in refrigerator covered for up to 2 days, but at least a couple of hours.
- Place steaks on a hot grill over direct heat for 5 minutes each side. Allow for more cooking time if you like a more well done steak. Use a thermometer to check for doneness, rare is 120 degrees, medium rare is 125 degrees, medium is 130 degrees.
- Allow steaks to stand for 15 minutes before serving

I must say, I am getting nervous. If Lisa learns to grill, what will she need me for? Oh yeah, someone has to do the dishes.

Seriously, it has been fun teaching her some of my "grilling secrets". I guess that is what life is all about, sharing the things you love with the people you love. What a concept!

I hope you all have enjoyed these recipes as much as we did. Share them with your family and friends. Have a great summer!
