I know, leftovers don't sound too appealing, but you will love these recipes. Today I will be sharing a Creole Turkey Soup Recipe from Linda of Recipe-Lovers.com. Creole Turkey Soup Recipe

Ingredients:
1 large onion, diced
1-1/2 green bell pepper, diced (I might add a jalapeņo or 2 here)
3/4 cup celery, diced
24 ounces stewed tomatoes
4-1/2 teaspoons chili powder (add ground pepper to taste)
3/4 teaspoon salt, or to taste
4 cups Turkey, cooked & cut up
6 cups rice, cooked

Directions:
- Combine all of the ingredients except for the rice in a crock pot. Cover and cook on LOW all day. Serve over cooked rice.
