Barbecue Pork Rib Recipe

I hope all our U.S. readers had a great Fourth of July Holiday, as Lisa and I did. And to all of you readers outside the U.S., I hope you had a wonderful weekend too!

Last week Lisa asked me if I could give her a grilling lesson. Well what better time to teach her than the long Fourth of July weekend?

So, I set off to teach Lisa a little about grilling. First I taught her the basics about preparing our grill for use. Of course she has seen me grill a hundred times or more in the past few years, so she had a good idea of what it is all about.

Next I taught her how to make some delicious Barbecue Pork Ribs. She did all the preparations, along with my guidance, beginning with a simple rub recipe and a barbecue sauce I got from Randy Pryor's cookbook, "Barbecue Secrets Revealed!".

The end result was an A+ for Lisa. The ribs were tender and juicy with a little heat and great flavor. We served the ribs with some baked beans and a tossed salad for the perfect Summer Holiday meal. Here's how "we" did it.

Smoke and Fire BBQ Sauce Recipe

Ingredients:
2 onions, chopped
2 Lemons, juiced
3 1/2 tbl. Worcestershire sauce
1/2 tsp. Each: salt, cayenne, black pepper, chili powder
2 tsp. Dry mustard
3 Cloves garlic
3 tbl. Liquid smoke
1/2 cup chili sauce, beer, salad oil
2 hot green peppers, chopped
6 tbl. Cider vinegar
10 Peppercorns
1 tbl. Brown sugar

Directions:
- Blend all ingredients in blender. Cook for 20 minutes. Slather it on & serve it up with lots of cold beverages and a fire extinguisher nearby.

Pork Rib Rub Recipe

Ingredients:

2 tablespoons Garlic salt
2 tablespoons Cayenne pepper, ground
2 tablespoons Black pepper, ground
1 tablespoon Cumin powder
1 tablespoon Brown sugar

Combine all these ingredients and store in a glass airtight container if you have any leftover, I usually don't!

Lisa's Pork Rib Recipe

Ingredients:
4 pounds Pork back ribs
Pork Rib Rub
Smoke and Fire BBQ Sauce

Directions:
- Apply rub to both sides of ribs and allow to sit in the refrigerator for a couple of hours, overnight if possible.
- Prepare grill for cooking with indirect heat.
- Place ribs on grill over indirect heat. Grill about 30 minutes on each side.
- Preheat oven to 350 degrees.
- After grilling, coat ribs with sauce, wrap in aluminum foil and place on a cookie sheet for cooking in the oven. Allow ribs to cook for 1 to 1 1/2 hours, until tender, adding sauce occassionally.

I have found that wrapping the ribs in foil and finishing them in the oven keeps them moist and tender. Of course you can cook for the entire time on the grill, just keep an eye not to let the ribs dry out.
