The Heat, Issue #34 - Baked Grits Recipe November 21, 2007 |
| Hello! Well, it is almost Thanksgiving. I hope you all have a huge feast planned. If you need a little help, I've got a few suggestions for you.
I never really liked grits much, but when I saw a different way of cooking them on a TV show I decided to give it a shot. So, I did some research online and in my personal cookbook collection and the result is this Baked Grits Recipe with cheese and...of course jalapenos.
It turned out even better than I could have hoped. After baking, the grits end up looking somewhat like cornbread but with a softer, creamy interior...and what a great flavor!
I ate a nice big serving of these baked grits along with some slices of ham, and a few splashes of Tabasco, for lunch on Sunday. It was such a success I am going to make another batch for Thanksgiving dinner.
Baked Grits Recipe
The recipe is simple. First make two cups of instant grits according to the directions on your box. In a large mixing bowl add the grits and 3 cups of grated cheddar cheese, 1 stick of unsalted butter, 3 eggs(beaten), and 3 or 4 jalapenos(diced). Stir all the ingredients together and salt to taste. Pour everything into a buttered 9-inch baking dish and bake for an hour at 350 degrees.
This is a great side dish that goes with just about anything. Give it a try this Thanksgiving, your family will love it!
